Natto, a traditional Japanese health food with a history spanning over a thousand years, contains polyglutamic acid (γ-PGA) as a primary component of its characteristic viscous threads. γ-PGA is a biopolymer composed of glutamic acid units, functioning similarly to protein polymers. Its unique molecular structure endows it with various biological functionalities, such as enhancing calcium absorption and possessing high water retention capabilities. Extraction Process
Food-grade and cosmetic-grade γ-PGA are produced through the fermentation of L-glutamic acid with the microorganism Bacillus subtilis var. natto (commonly known as natto bacteria). This is the same microorganism used in traditional natto production. Following fermentation, a series of purification steps yield the valuable, biodegradable γ-PGA.
For medical-grade applications, an additional endotoxin removal process is conducted prior to drying and milling, achieving a high-purity material with endotoxin levels below 0.5 EU/mg.
